Apple Cake


4 cups peeled and chopped apple or carrots

1 1/2 cups white sugar

4 eggs

1 cup chopped pecans

2 cups all-purpose flour

2 tsp Hinds cinnamon

1 tsp salt

1/2 cup raisins

2 teaspoons baking soda

1 cup oil


Preheat oven

In a large bowl, blend the sugar with the eggs. Add the oil, and mix well. Mix in flour, spices, salt, and baking soda. Stir in the nuts and the apples. Pour batter into prepared pan.

Bake for 40 minutes
