Beef Medallion


150g Beef Fillet

1 tbsp Hinds BBQ Spice

1/4 tsp cumin

Salt and Pepper to taste

2 thyme sprigs

2 cloves crushed garlic

1/4 cup cream

1/2 tsp black peppercorns whole

1/2 tsp green brined peppercorns

2 tbsp butter

2 tbsp olive oil


Cut and tie beef medallions in cooking string

Nice BBQ spice, cumin, salt and peppercorns on chopping board

Set aside for 5mins

Place oil and butter in heated skillet or pan

Add beef medallions to pan or skillet and seal on both sides

Add thyme and garlic to pan turn heat down to medium and continuously coat butter and oil mix over fillet for 10 mins (remove steak from pan but do not discard herbs and oil in pan)

Place steak on baking pan and place into oven for another 30mins

Remove steak from oven and add back into pan, heat the pan, add cream and cook until sauce is thick.

Serve with mashed potato or fresh green salad, enjoy!!!
