Beer Battered Fish


227 gms Bream fish fillets cut in half lengthwise

Salt and Hinds White Pepper to taste

Enough corn starch (mezzena ) flour to lightly coat

For the batter

1 cup self-rising flour (or all-purpose flour mixed with 1 tsp Buffalo baking powder, and 1/2 tsp fine salt and 1tsp Hinds White Pepper)

2 tablespoons rice flour, or cornstarch

1/4 teaspoon baking powder about 1 cup lager-style beer, plus more as needed to adjust

Place in a bowl and mix to batter consistency (ie pancake batter consistency)


Heat oil in sauce pan to medium high heat
• Coat fish fillets in cornstarch and set aside
• Dip fish into batter and make sure to shake off excess batter
• Place into hot oil and fry for 3 mins on each side or until cooked on both sides to golden brown
• Enjoy with a garden salad and French fries!!
