Cauliflower and Broccoli Bake
Ingredients
1 head broccoli cut into florets
1 head cauliflower cut into florets
1 large onion , sliced
4 garlic cloves , minced
Salt and fresh ground pepper , to taste
Sauce:
2 tablespoons butter
2 tablespoons all-purpose flour
1/4 teaspoon salt
1/8 teaspoon pepper
1 cup milk / cream
1/2 teaspoon dijon mustard
1/4 teaspoon smoked paprika
3/4 cup cheese of choice
Method
Add 2 tablespoons olive oil to a pan and heat over medium-high heat.
Add onions and cook for 3 minutes, or until softened. Stir in minced garlic and continue to stir and cook for 1 minute.
Add broccoli and cauliflower to the skillet.
Season with salt and pepper and continue to cook for about 2 minutes, or until lightly golden.
Remove from heat and transfer the vegetables to previously prepared baking dish; set aside
Sauce:
In saucepan, melt butter over low heat. Stir in flour, salt and pepper. Cook over medium heat, stirring constantly, until mixture is smooth and bubbly; remove from heat.
Gradually stir in milk, add mustard, and paprika.
Heat to boiling, stirring constantly; boil and stir 1 minute.
