Chicken Fricassee
Ingredients
4 chicken quarters
3 tbsp butter
2 cups onion (chopped)
2 cloves garlic (chopped)
1/2 juice of lemon
1 can button mushrooms
1 can Rhodes Quality Butter Beans
1/2 cup dry white wine
3 tablespoons Rhodes Quality Bisto
3 cups chicken stock or vegetable stock
1 bay leaf
3 sprigs parsley
3 sprigs thyme
2/3 cup cream
Method
Heat pan and add butter
Gorge chicken pieces and fry till brown starting with skin side down 3-5 mins
Turn chicken over and fry again for another 3-5 mins remove chicken and set aside
Add onions to the oil and fry for 5 mins
Add garlic and mushrooms to pan and fry for another 3-4 mins
Add the Bisto and mix to form a paste
Add the lemon juice to deglaze the pan
Add the parsley, thyme and bay leaf to the pan
Add the wine to the pan and cook until alcohol evaporates, add the chicken or vegetable stock
Return the chicken to the pan, add butter beans
Bring the mix to a simmer and cover, let it cook for another 25mins
Add the cream to the pan and let the sauce thicken
Serve with rice or macaroni, enjoy!!
