Creamed Spinach
Ingredients
Whole Bunch of Spinach
4 Cups Water
Salt and Pepper to taste
1 Cup Butter
1 Cup Flour
1/2 Cup Cheddar Cheese
1 Cup Cream
1 Cup Milk
1/2 Cup Parmesan Cheese
2 Cloves Garlic
1/2 Cup of Onion
Method
For the Spinach
Boil water and add 1 Teaspoon of Salt to it
Remove stalks from Spinach and add to the water to wilt the leaves slightly
Strain off water in a colander ( holly dish! ) and immediately run some cold water through it to stop the cooking process
Squeeze the leaves to get rid of any excess water and set aside
For the sauce
Preheat pan and melt the butter
Saute the onions and garlic
Slowly add the flour and mix into a thick paste
Add the Cheddar Cheese
Add the cream in slow batches along with the milk, reduce the heat and cook sauce to desired consistency ( sauce should be able to hold behind a spoon)
Add the Spinach back to the sauce, add the Parmesan Cheese and season with Salt and Pepper accordingly and enjoy!!
