Mushroom and Pistachio Nut Soup
Ingredients
1 Small Red Onion
2 Cloves Garlic
400gms Oyster Mushrooms
½ cup Flour
¼ cup Pistachio Nuts (ground)
1 cup chicken stock
Bouquet Garni
1 cup water
1 tsp Hinds Pure Black Pepper
1 tsp Salt
2 tbsp Olive oil
Method
Heat pan with 2 tbsp of Olive Oil
Sautee onions, garlic and mushroom
Add flour and cook for 2 mins
Add chicken stock and bouquet garni and bring to the boil
Add Pistachio nuts, salt and Hinds Pure Black Pepper
Add water and turn down to a simmer
Cook until soup consistency
Remove bouquet garni and serve with crusty bread and enjoy!!
