Quick and Easy Beef Stew

Ingredients

Mixed cut beef , small pieces

1/4 cup oil

1 onion

1 can Rhodes Quality Tomato Indian Style

4 peeled garlic cloves

Small handful parsley

2 chillies , optional

1-2 basil leaves

1 teaspoon fresh thyme

1 Tablespoon Rhodes Quality tomato paste

1 Tablespoon curry

1 teaspoon white pepper

1 teaspoon paprika

1 cup beef stock

2 tablespoon soy sauce

1 teaspoon sugar

Method

Boil beef with salt, pepper and some chopped onions in a medium pot until tender. It will take approximately 30 minutes or more, depending the cut of beef and how you like your beef cooked. Drain and place beef stock aside.

In a blender, blend the onions, can Tomato Indian Style, garlic, parsley, celery, thyme, basil and chili

Heat oil. Gently pour the blend of puree ingredients, in the saucepan, add curry powder, white pepper, soy sauce, sugar, smoked paprika and beef stock bring to a boil, reduce heat and simmer for about 30 minutes.

Then return beef and simmer for another 10 to 15 minutes.

Stir the pot frequently to prevent the sauce from sticking to the pot. -Occasionally adding beef stock or water as needed to prevent burns

Adjust seasonings, sauce consistency with water/stock and salt.

Serve warm with desired side dish.
