Roast Lamb Shoulder

Ingredients

Marinade:

2 Sprigs of Rosemary

2 tbsp Packo Masala Curry Powder

3 cloves garlic

2 tsp Hinds Pure Black Pepper

2 tsp salt

1 cup Natural or Greek Yoghurt

¼ cup honey

2 tbsp olive oil


Lamb:

1 lamb shoulder

3 cloves garlic

1 sprig of lamb

5 par boiled baby potatoes (quartered)

1 red onion

Method

Marinate Lamb Shoulder overnight or for at least 4hrs

Place on rack over potatoes and onions

Bake in oven at 180 ◦C for 2hrs

Remove from oven let rest

Carve and enjoy with pan roasted potato and onion
