Sambaza (Fried Kapenta)
Ingredients
400gms Fresh Kapenta
1 cup Southern Style Coating
1 cup Flour
1 cup Breadcrumbs
2 eggs
Salt and pepper to taste
7. 2 cups vegetable oil
Method
Place cups of flour, breadcrumbs and Hinds Southern Style coating on individual trays in baking tray
Meanwhile beat the eggs in a separate bowl
Place a separate backing tray with wire rack to the side
Place fresh Kapenta in flour individually (preferably work in batches)
Heat oil in saucepan to medium
Place Kapenta in egg wash
Place Kapenta into Hinds Southern Style and breadcrumbs mix
Deep fry Kapenta until the fish float and are golden brown
Enjoy with a dash of lemon or chili mayonnaise!
