Stuffed Button Mushrooms
Ingredients
6 large button Mushrooms
¼ cup red, yellow and green peppers
2 cloves garlic
½ brown onion
1 tbsp Hinds Potato Spice
2 cups mozzarella cheese
Salt and Pepper to taste
1 tbsp oil
1 tbsp butter
Parsley and Spring onion to garnish
Method
In a pan fry off garlic, onions and peppers in Hinds Potato Spice in oil and butter
Add salt and pepper to taste
Place mushrooms cavity upside and stuff with vegetable mix and drizzle with olive oil
Top with mozzarella cheese and bake in oven at 150◦C for 30mins or until mozzarella is golden brown and bubbling
Serve hot with a lovely glass Sauvignon Blanc on a summer’s day!!
