Tomato Gravy
Ingredients
2 whole tomatoes (roughly diced)
1 tbsp Hinds Curry powder
2 cups tomato puree
2 cloves garlic
1 tbsp sugar
1/2 onion (diced)
Salt & pepper to taste
1 cup water
1 tbsp vegetable oil
Method
Heat pan with oil in it at medium heat
Fry onions and garlic in Hinds curry powder until soft 5 mins
Add diced and puree tomato and fry for another 5 mins
Add water and sugar
Bring to the boil and simmer to thick gravy consistency
Add salt and pepper to taste
Serve with rice or potatoes, enjoy!!
